Trout is the dish

Alabalık — Black Sea trout, farmed in the cold streams — is grilled or pan-fried in cornmeal and served with corn bread. Almost every restaurant does it, and it is usually the best thing on the menu.

Kuymak and breakfast

A Black Sea breakfast means kuymak (melted cheese and cornmeal), village butter, honey and endless tea. Order it late morning at a guesthouse terrace rather than a tour-bus stop.

Lake-view terraces

The restaurants on the north shore catch afternoon light on the water. Ask for a table on the wooden deck, and expect a wait between 13:00 and 15:00 in summer.

Higher up the valley

Drive 20 minutes towards Şekersu and the plateau kitchens get simpler and cheaper: soup, trout, muhlama, tea.

Practical notes

Most places are family-run and open all day; alcohol is not served everywhere. Halal food is standard. Card payment is common but carry some cash for small plateau spots.
